Mini Appetizers - Cherry Tomato Poppers!

I’m not sure if it’s the warm weather on its way, a pregnancy craving or just simply thinking about what to put on the menu for Easter since it is fast approaching but I have been thinking about these little mini appetizer treats that go great for any feast. This is also a great way to get the kids to devour their tomatoes which I have found is not always an easy thing to do. These little Cherry Tomato Poppers are so easy to make and you can really make a variety of fillings to put inside of them. Let your imagination take over and have some fun of your own with these little Mini Favorites.

Cherry Tomato Mini Appetizers:

  • Grab a couple of pints of cherry tomatoes from your local grocery store, farmers market or garden. I always grab 1 more then I plan on making because they go so quickly.
  • Wash tomatoes thoroughly.
  • Cut a thin layer off of the bottom of your clean cherry tomato. You can use yellow or red tomatoes for a mix of color on your tray. Cutting the layer off the bottom allows them to stand straight on your serving tray.
  • Cut off the top of the cherry tomato and scoop out inside with a melon scooper until you have a nice little bowl.
  • Put upside down on a paper towel to dry and then put into refridge for cooling until you are ready to fill with desired choice of mixture.
  • Now have fun with making your filling. Get creative or stick to a traditional favorite. You can find pre-made mixes in your grocery store such as veggie dip or you can make your own. This is the fun part because there are many different things that the tomato flavor enhances. Here are a few that I love to fill mine with:

o   Guacamole (homemade or store bought)

o   Salsa

o   Tuna Salad

o   Chicken Salad (made just like tuna but with the canned chicken breast you can buy in the store or home cooked and shredded).

o   Crab Salad

o   Bacon & Ranch Mixture – Equal parts mayo and sour cream, half part ranch dressing, cooked bacon crumbled and chopped parsley, spinach or lettuce. Feel free to add anything else that sounds good with this like shredded cheese, cream cheese etc. Add or delete ingredients to your preference.

  • Take cooled tomatoes from fridge and with a small spoon, fill each individual tomato with your desired stuffing mixture. You can also add some flair by filling each tomato with a pastry bag and pastry tip.
  • Decorate your Mini Cherry Tomato Popper with a piece of parsley, cocktail umbrella or anything else to carry out the theme of your “Get-Together”!

    Never have used the candy melts when decorating cakes, but it seems very easy, I’ll have to give them a try!

    I’ll have to try some of these the next time we have friends over. Easy to eat and they sound delicious.
